Freezer Meals

I started doing freezer meals more than 18 years ago when Jackson was just a baby.  I have done them off and on over the years.  You spend one or two days cooking all day preparing multiple meals.  It is a lot of work but when you are finished your freezer is full and your dinner is mostly ready for many days.  At one point in time I would 90 meals at a time and then I would not have to cook at all (unless I wanted to) from Halloween until after the holidays.
I also used to go around and do a presentation teaching people how to convert their own recipes and how to do freezer meals but I have not done it for a few years.
I was asked over a month ago if I would teach this class for a Relief Society Super Saturday which was yesterday.  I was excited at the time because I thought it would give me a chance to get some meals into my own freezer.  But as time has passed since being asked I have had second thoughts and life has happened and I was not too excited about doing all that work; I even tried to get out of the commitment but my friend would not let me.
On Friday night I spent about 2 hours and did 13 meals - what a great accomplishment. 
This is those meals in my freezer - YEAH!
I did my presentation yesterday and had a fun time.  I was also so excited after doing just those few meals that I have already started planning what other meals I am going to do on payday to add to my freezer.  I have also started planning what I will be able to do with that extra time at night instead of fixing dinner.
It was good to do when the kids were younger and life was busy. 
Our lives have changed and everyone is an adult at our house now but it seems that they have all forgotten how to cook or they cannot figure out what to fix so this will take care of that.
I can just pull out a meal the night before so that it is defrosted and ready to go the next day then I can either put it in the crock pot or set the oven to come on and dinner will be done when I walk into the house after work - YAHOO!
I am really so EXCITED!
